Mark’s Masterpiece Smoked Ribs

Get ready to create a mouthwatering masterpiece with “Mark’s Masterpiece” – a unique blend of 21 herbs and spices that will take your smoked ribs to the next level. These ribs are so tender and flavorful that they’ll become the star of your barbecue. Let’s get started!

Ingredients:

For the Ribs:

  • 2 racks of baby back ribs (about 4-5 pounds each)
  • 1/4 cup yellow mustard (for binding)
  • 1/4 cup apple cider vinegar

“Mark’s Masterpiece” as a dry rub:

  • 1/4 cup “Mark’s Masterpiece” seasoning blend (21 herbs and spices)

For the Mop Sauce (Optional):

  • 1 cup apple cider vinegar
  • 1/4 cup water
  • 2 tablespoons “Mark’s Masterpiece” seasoning blend
  • 2 tablespoons brown sugar
  • 1 tablespoon hot sauce (adjust to your preferred heat level)

Instructions:

Prepare the Ribs:

  • Remove the membrane from the back of each rack of ribs. Use a knife to gently lift one end of the membrane, then grab it with a paper towel and peel it off.
  • Rinse the ribs under cold water and pat them dry with paper towels.

Apply the Mustard and Seasoning:

  • Brush both sides of the ribs with a thin layer of yellow mustard. This will help the seasoning adhere to the meat.
  • Generously rub Mark’s Masterpiece onto both sides of the ribs, ensuring they are well coated. Use as much or as little seasoning as you prefer, depending on your taste for flavor and spice.

Prepare the Smoker:

  • Preheat your smoker to 225°F (107°C) using your choice of smoking wood or pellets, such as hickory or apple wood, for a delicious smoky sweet flavor.

Smoke the Ribs:

  • Place the seasoned ribs on the smoker grates bone side down.
  • Smoke the ribs for approximately 3-4 hours, maintaining a consistent temperature of 225°F (107°C). The ribs are ready when the meat has pulled back from the bones, and they have a beautiful mahogany color.

Create the Mop Sauce (Optional):

  • In a small saucepan, combine apple cider vinegar, water, “Mark’s Masterpiece” seasoning blend, brown sugar, and hot sauce. Simmer for a few minutes until the sugar has dissolved. Use this sauce to baste the ribs during the last hour of smoking, applying it every 20-30 minutes to keep the ribs moist and add extra flavor.

Rest and Serve:

  • Once the ribs are done, remove them from the smoker and let them rest for about 10 minutes.
