Everyone makes a Lemon Pepper Seasoning mix, with just slight variations. And we are no exception, but our variation is ANYTHING but slight!
Lemon zest (peel) is an essential ingredient to any good recipe, however we just needed MORE lemon! So we combined a slightly sweetened, crystalized lemon juice with citric acid (that pucker-punch coating on most sour candies), giving it that zing with the zest. Of course there is a good amount of pepper, as to be expected, and thus the name Peppery Lemon. We also added a goodly amount of cardamom, which has a slight lemony aftertaste to it, with the robust flavor of rosemary. Thus, we have created the perfect lemony blend! This is not just limited to poultry or fish. It is also wonderful on any salad, including a good potato salad, eggs or ANY dish where you want that POP of lemony flavor with the mild heat of black pepper.
We added actual lemon juice into our special blend, making the chicken or fish POP with flavor! Now combine that with rosemary and you have an exciting winner with unbeatable taste! – Mark
BEST USE FOR FISH OR POULTRY
Apply Peppery Lemon seasoning moderately, rubbing into meat, (about 1 tbsp per lb) then gently rub on light coating of oil, (preferably olive oil, however vegetable or canola oils will also work). Allow to sit 1 to 2 hours, covered in the refrigerator, before cooking meat. Afterwards, while the portion is cooling down, sprinkle on Peppery Lemon, half as much again, This boosts and complements the lemon flavor.
Also great on salad and eggs!
